Ruiz Jiménez, Ingenium Pet-Nat Garnacha blanca 2023

A light and gently sparkling dry white wine from Rioja, with apple and floral aromas and the bubbles that come from fermentation in the bottle—the método ancestral or pétillant naturel style.

Made from hand-harvested grapes, with no sulphites or sugar added, it's a relaxed, fresh and appetizing wine, with an astronaut on the label.

Elena writes from the winery:

‘…they are different wines from one vintage to the other. They are 100% Natural with no added sulphites, spontaneous fermentation and zero intervention. Therefore….these PET NATS go with the flow!

‘Our job is simply to make sure we take all the steps when we have to and select the grapes that we think are best.

‘We bring the grapes in, we press and bring down the temperature of the wine as much as we can and then we check the density every few hours, because we know that we only have one shot at bottling at the perfect time.

‘Then we all gather and start bottling and putting on the caps ourselves. You can see a very short video as to how everything is done.’

There's often a typical, normal sediment in this style of wine. You can help to keep it at the bottom of the bottle by chilling it for a half an hour or so, and pouring carefully of course.
